Enjoy the deliciousness of this easy Mary Berry’s Eve’s Pudding!

To begin, peel and slice or cube 500 grams of cooking apples. Grease an oven-proof dish and arrange the apples at the bottom. Sprinkle over 90 grams of dark brown sugar, and add the zest and juice of a lemon for a zing of freshness.

Now, onto the sponge topping. In a large bowl, combine 125 grams of baking spread, 125 grams of caster sugar, 2 eggs, 125 grams of self-raising flour, and a teaspoon of baking powder. Beat these ingredients together until you achieve a smooth and velvety mixture. Spoon this delightful batter over the apples, ensuring it covers them entirely. Use the back of a tablespoon to level it out.

Preheat your oven to 160°C fan/180°C/Gas 4, and let your creation bake for around 45 minutes. Keep an eye on it until it turns beautifully golden and springs back to the touch.

Once it’s done, my dear, serve this scrumptious Eve’s Pudding piping hot, accompanied by a luxurious drizzle of custard or a dollop of cream. It’s a dessert that will surely warm your heart and bring smiles to everyone around your table.

So, my darling, put on your apron, gather your ingredients, and let the delightful aroma of baked apples fill your kitchen. Enjoy every spoonful of this heavenly Eve’s Pudding!
