If there's one name that stands out in the world of British baking, it's Mary Berry. Her timeless recipes and classic baking techniques have won the hearts of millions, and today, we're thrilled to share with you her famous Rock Cake recipe. These delightful treats are perfect for afternoon tea or a quick snack. With a crunchy exterior and a soft, fruity interior, Mary's Rock Cakes are a true delight. Let's get baking!

Ingredients:
- Self-Raising Flour, 8 oz
- Baking powder, 2 tsp
- Butter, 4 oz (softened)
- Sugar, 2 oz
- Dried fruit mixed, 4 oz
- Currants, 2 oz
- Egg, 1 large
- Milk, 1 tbs
- Demerara sugar for sprinkling

How To Make Mary Berry Rock Cakes?
1. Preheat the oven to 200°C and lightly grease 2 baking trays. This will ensure that your rock cakes don't stick and have a lovely golden-brown finish.

2. In a large bowl, add the self-raising flour and baking powder. Give them a quick stir to combine.

3. Add the softened butter to the bowl. Using your fingertips, rub the butter into the flour mixture until it resembles fine breadcrumbs. This step is crucial in achieving a light and crumbly texture.

4. Stir in the sugar, dried mixed fruit, and currants. Make sure the fruit is evenly distributed throughout the mixture, giving each bite a burst of flavor.

5. In a small bowl, beat the large egg and milk together. This will help bind the ingredients and add moisture to the mixture. If the mixture seems a bit dry, add a little more milk until you achieve a slightly sticky consistency.

6. Now it's time to shape your rock cakes. Take about a tablespoonful of the mixture and form it into a rough, rock-like shape. Place each rock cake onto the prepared baking trays, leaving some space between them to allow for spreading.

7. Sprinkle the tops of the rock cakes generously with demerara sugar. This will create a delightful sweet crunch on the surface of the cakes.

8. Bake the rock cakes in the preheated oven for approximately 15 minutes or until they turn golden brown on top. Keep an eye on them to ensure they don't overbake.

9. Once baked, remove the rock cakes from the oven and transfer them to a wire rack to cool completely. This will prevent them from becoming soggy on the bottom.

Helpful Hints:
- Feel free to get creative with the dried fruit you use. Raisins, sultanas, chopped dried apricots, or cranberries all work wonderfully in this recipe.
- If you prefer a more subtle sweetness, you can reduce the amount of sugar in the recipe to suit your taste.
- Serve these delightful rock cakes warm or at room temperature, alongside a pot of freshly brewed tea for the ultimate afternoon treat.

Conclusion:
There's something truly comforting about the taste of a homemade rock cake, and Mary Berry's recipe never disappoints. With its simple yet elegant combination of ingredients, this timeless treat is sure to become a family favorite. So why not channel your inner Mary Berry and give these delicious rock cakes a try? Your taste buds will thank you!

Remember, baking is all about enjoying the process, so take your time, savor the aroma wafting through your kitchen, and indulge in the sweet rewards. Happy baking!
