Indulge in the comforting flavours of Mary’s Easy Fruitcake. Packed with mixed dried fruit, this cake is a delightful treat that can be enjoyed on any occasion. With simple ingredients and a straightforward method, you’ll have a delicious fruitcake ready to be savored.

Ingredients:

  • 225g salted butter, room temperature
  • 180g fine sugar
  • 4 large eggs
  • 1/2 tsp almond extract
  • 1 tsp vanilla extract
  • 225g self-raising flour
  • 100g ground almonds
  • 450g mixed dried fruit
  • 25g flaked almonds (optional)

Method:

  1. Begin by sifting the self-raising flour and ground almonds together. Take 2 tablespoons of the flour mixture and toss it with the mixed dried fruit. Set aside.
  2. Using an electric whisk, cream the butter and sugar together in a mixing bowl until light and pale in color.
  3. Beat in the eggs, one at a time, ensuring each egg is well incorporated before adding the next. Mix for approximately 2 minutes.
  4. Beat in the almond extract and vanilla extract to enhance the flavor of the cake.
  5. Using a spatula, gently fold in the flour mixture until well mixed. Be careful not to overmix.
  6. Fold in the prepared mixed dried fruit, ensuring it is evenly distributed throughout the batter.
  7. Spoon the cake mixture into an 8-inch round pan that has been lined with parchment paper. Smooth the top with the back of a spoon or a spatula.
  8. If desired, sprinkle flaked almonds on the surface of the cake, adding an extra touch of texture and flavor.
  9. Preheat the oven to 160°C (320°F) and bake the fruitcake for approximately 1.5 hours, or until a skewer inserted into the center comes out clean. The baking time may vary, so keep an eye on the cake as it bakes.
  10. Once the cake is done, remove it from the oven and allow it to cool in the pan. This will ensure the flavors develop and the cake sets properly.
  11. For the best taste and texture, it is recommended to let the fruitcake rest overnight before serving. This allows the flavors to meld and the cake to become even more delicious.
