Our Zesty Version of Mary Berry’s Easy Key Lime Pie

Indulge in our refreshing and tangy flavours of Mary Berry’s Easy Key Lime Pie. This recipe promises a perfect balance of sweetness and tartness, making it a delightful dessert option. Ingredients:

For the Base:

  • 150g digestive biscuits
  • 65g butter
  • 25g demerara sugar

For the Filling:

  • Grated rind of 1 large lime
  • Juice of 4 large limes
  • 397g can condensed milk
  • 450ml double cream

Method:

  1. Start by crushing the digestive biscuits. Place them in a plastic bag and use a rolling pin to crush them into fine crumbs.
  2. In a medium-sized pan, melt the butter over low heat. Remove the pan from the heat and stir in the biscuit crumbs and demerara sugar until well combined.
  3. Press the mixture firmly over the base and sides of a 23cm loose-bottomed tin to form the crust. Allow it to set while you prepare the filling.
  4. In a mixing bowl, combine the lime juice, condensed milk, and 300ml of double cream. Beat the mixture until well blended.
  5. Pour the filling into the prepared crumb crust, ensuring it is evenly distributed. Gently level the surface with a spatula.
  6. Chill the pie in the refrigerator for several hours, or until it is set and firm.
  7. Once the pie is chilled and set, remove it from the tin carefully.
  8. Whip the remaining double cream until it forms soft peaks. Spread the whipped cream over the top of the pie, creating a smooth layer.
  9. Finish by scattering grated lime rind over the cream topping, adding a burst of fresh citrus flavor.
  10. Serve the Key Lime Pie well chilled and enjoy!
