  • 150g/5½oz roasted red peppers in oil (from a jar), drained and chopped
  • 1 large garlic clove, crushed
  • 200g/7oz full-fat crème fraîche
  • 1 x 30g packet of flat-leaf parsley, leaves roughly chopped
  • 1 x 30g packet of basil, leaves roughly chopped
  • 30g/1oz Parmesan, finely grated
  • Salt and freshly ground black pepper

Method:

Step 1: Prepare the Pasta:

  1. In a pot of boiling salted water, cook the penne pasta according to the packet instructions. Drain, reserving a small amount of the cooking water.

Step 2: Crispy Delights:

  1. On high heat, use a large frying pan to fry the snipped Parma ham until it turns delightfully crispy. Stir occasionally for a few minutes. Set aside the crispy ham using a slotted spoon.
