Ingredients:

  • 2.5 lbs (1.1 kg) semi-sweet chocolate, chopped
  • 2 lbs (900 g) whipping cream

Instructions:

  1. Chop the Chocolate:
    • Begin by finely chopping the semi-sweet chocolate on a cutting board using a sharp chef’s knife. The smaller the pieces, the easier they will melt. Place the chopped chocolate into a heatproof bowl.
  2. Boil the Whipping Cream:
    • In a small pot, pour the whipping cream and heat it over medium to high heat. Bring the cream to a simmer, watching for bubbles around the edges of the pot and gentle movement just below the surface.
  3. Combine Ingredients:
    • Once the whipping cream has reached a simmer, carefully pour it over the chopped chocolate in the heatproof bowl. Choose a bowl large enough to accommodate the cream and chocolate mixture. Cover the bowl with a lid or a plate, allowing the heat from the cream to melt the chocolate. Let it sit for 10-15 minutes.
  4. Stir It Up:
    • After the resting time, remove the cover and begin gently stirring the mixture in the center using a spatula. As you stir, the chocolate and cream will blend together, creating a smooth, velvety, and rich ganache. Continue stirring until the ganache is fully incorporated.
  5. Pour through Sieve:
    • To ensure a silky texture and remove any lumps or remaining bits of chocolate, pour the ganache through a sieve into a clean bowl. This step guarantees a flawless finish for your ganache.
