Indulge in the comforting flavors of apple and cinnamon with our Mary Berry inspired Apple & Cinnamon Loaf. This moist and flavorful loaf cake combines the sweetness of diced apples, the warmth of ground cinnamon, and the richness of butter to create a delightful treat that’s perfect for any time of the day. With a sprinkle of demerara sugar and a touch of apricot jam, this loaf is sure to impress. So, let’s gather our ingredients and get ready to bake this scrumptious Apple & Cinnamon Loaf!

Ingredients:

  • 75g/2½oz butter, softened
  • 200g/7oz self-raising flour
  • 100g/3½oz light muscovado sugar
  • 1 tsp ground cinnamon
  • 3 dessert apples, about 350g/12oz before peeling
  • 3 free-range eggs, beaten
  • 1-2 tbsp demerara sugar, to taste
  • 2 tbsp warmed, sieved apricot jam

Instructions:

  1. Preheat the oven to 180°C/160°C Fan/Gas 4. Grease and line a loaf tin with parchment paper.
  2. In a mixing bowl, rub the softened butter into the self-raising flour until it resembles fine breadcrumbs. This can also be done in a food processor for convenience. Stir in the light muscovado sugar and ground cinnamon.
  3. Peel, core, and dice two and a half apples. Add them to the cake mixture along with the beaten eggs. Beat until well combined.
  4. Divide the cake mixture evenly into the prepared loaf tin. Thinly slice the remaining half of the apple and arrange the slices in a row along the middle on top of the cake mixture. Sprinkle with demerara sugar to add a delightful crunch and sweetness.
  5. Bake the loaf in the preheated oven for 35-45 minutes, or until it turns golden-brown, rises, and becomes firm to the touch in the center while slightly shrinking from the sides of the tin.
  6. Once baked, remove the loaf from the oven and brush the top with warmed, sieved apricot jam for a glossy finish.
  7. Allow the loaf to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.
