Ah, my dear, let me introduce you to a delightful recipe known as Eve’s Pudding. It’s a charming dessert that perfectly captures the essence of apple season. Imagine slices of luscious apples nestled beneath a light and fluffy sponge cake topping. It’s an absolute delight, and it can be enjoyed with a dollop of custard or cream.

Ingredients:

125 gBaking Spread
125 gCaster Sugar

125 gSelf-Raising Flour

Instructions:

  1. Grease an oven-proof dish.
  2. Peel and slice or cube the cooking apples and arrange them in the dish.
  3. Sprinkle dark brown sugar over the apples.
  4. Zest and juice the lemon, then sprinkle them over the apples.
  5. In a large bowl, combine the baking spread, caster sugar, eggs, self-raising flour, and baking powder. Beat until smooth.
  6. Spoon the batter on top of the apples in the dish, ensuring they are fully covered. Use the back of a tablespoon to level it out.
  7. Preheat the oven to 160°C fan/180°C/Gas 4.
  8. Bake the pudding for approximately 45 minutes, or until it turns golden and springs back to the touch.
  9. Serve the Eve’s Pudding hot, accompanied by custard or cream.

To begin, peel and slice or cube 500 grams of cooking apples. Grease an oven-proof dish and arrange the apples at the bottom. Sprinkle over 90 grams of dark brown sugar, and add the zest and juice of a lemon for a zing of freshness.

Now, onto the sponge topping. In a large bowl, combine 125 grams of baking spread, 125 grams of caster sugar, 2 eggs, 125 grams of self-raising flour, and a teaspoon of baking powder. Beat these ingredients together until you achieve a smooth and velvety mixture. Spoon this delightful batter over the apples, ensuring it covers them entirely. Use the back of a tablespoon to level it out.

Preheat your oven to 160°C fan/180°C/Gas 4, and let your creation bake for around 45 minutes. Keep an eye on it until it turns beautifully golden and springs back to the touch.
