  4. In a separate bowl, lightly beat the extra-large eggs. Add the vanilla essence and milk, and whisk until well combined. The mixture should have a slightly lumpy consistency.
  5. Pour the wet mixture into the bowl with the dry ingredients. Gently stir until all the ingredients are fully incorporated. Be careful not to overmix, as this can result in dense muffins.
  6. Spoon the mixture into the muffin tray, filling each mold about two-thirds full. The batter will rise during baking, so avoid overfilling.
  7. Place the tray in the preheated oven and bake for approximately 20-25 minutes. To check for doneness, insert a skewer into the center of a muffin – it should come out clean. The muffins will also develop a beautiful golden-brown color.
  8. Once baked, remove the muffins from the oven and allow them to cool in the tray for a few minutes. Then transfer them to a wire rack to cool completely or enjoy them while still warm.
