Easy Coffee & Walnut Cake: Inspired by Mary Berry

Indulge your senses in the exquisite flavours of a classic Coffee & Walnut Cake. This delightful treat combines the rich aroma of coffee with the satisfying crunch of chopped walnuts. Ingredients for Coffee and Walnut Cake:

Sponge Ingredients
225 g Self-Raising Flour
225 g Unsalted Butter (softened)
225 g Sugar
4 Eggs
1 tsp Baking Powder
½ cup Chopped Walnuts
1 tbsp Instant Coffee with 2 tbsp hot water
Coffee Icing Ingredients
450 g Icing Sugar
150 g Butter (softened)
2 tsp Instant Coffee mixed with 1 tbsp hot water
2 tbsp Milk
Walnut Halves (to decorate)

Coffee Buttercream Icing for Coffee and Walnut Cake:

Making the buttercream is a breeze, and you can even use it for cupcakes too! Begin by measuring the coffee granules into a bowl, adding the boiling water, and stirring until smooth. Allow it to cool. Then, add the softened butter and sifted icing sugar to the bowl. Using an electric hand whisk, beat the mixture until pale and fluffy. How to Make the Best Coffee and Walnut Cake:

  1. Preheat your oven to 180°C/160°C fan/Gas 4. Grease and line two 20cm round sandwich tins.
  2. To make the sponges, add all the sponge ingredients into a mixing bowl. Using a food mixer, mix until smooth and combined. Divid the batter evenly between the prepared tins and level the surface with the back of a spoon.
  3. Bake in the preheated oven for approximately 25 minutes, or until the cakes turn golden. Set them aside to cool completely before removing them from the tins and peeling off the baking paper.
  4. Now, let’s move on to the buttercream. Measure the coffee granules into a bowl, add boiling water, and stir until smooth. Allow it to cool. Add the softened butter and sifted icing sugar to the bowl. Using an electric hand whisk, beat the mixture until pale and fluffy.
  5. To assemble the cake, spread half of the buttercream onto one sponge. Place the other sponge on top and spread the remaining buttercream on the surface. Finally, decorate the cake with walnut halves, adding an elegant touch to this already stunning dessert.
  6. Serve and enjoy this luscious Coffee & Walnut Cake with a cup of your favorite coffee or tea.
