Tropical Delight: Homemade Banana Coconut Cake Recipe

Ah, the delightful combination of bananas and coconut! These two tropical ingredients come together to create a symphony of flavors in a cake that’s perfect for any occasion. This Homemade Banana Coconut Cake is a tropical paradise in every bite. Follow along, my fellow bakers, and let’s embark on a culinary journey to create this delectable treat.

Ingredients:

For the Cake:

  • 2 ripe bananas
  • 1 1/2 teaspoons lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups buttermilk

For the Coconut Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup coconut milk
  • 1 teaspoon pure vanilla extract
  • 1/2 cup shredded coconut, toasted (for decoration)

Instructions:

For the Cake:

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. You can also line the bottoms with parchment paper for easy removal.
  2. In a small bowl, mash the ripe bananas and mix them with lemon juice. Set this mixture aside.
  3. In another bowl, combine the flour, baking soda, and salt.
  4. In a large mixing bowl, cream together the softened butter, vegetable oil, and sugar until the mixture is light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Gently mix in the banana mixture. Be sure not to overmix; just combine until the ingredients are blended.
  7. Gradually add the dry ingredients, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just incorporated.
  8. Divide the batter evenly between the prepared pans and smooth the tops.
  9. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes, then remove them from the pans and allow them to cool completely on a wire rack.

For the Coconut Frosting:

  1. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add the powdered sugar, coconut milk, and vanilla extract. Beat until the frosting is smooth and fluffy.

Assembling the Cake:

  1. Once the cakes are completely cool, spread a layer of the coconut frosting on top of one of the cakes.
  2. Place the second cake on top and frost the top and sides of the entire cake with the remaining frosting.
  3. Decorate the cake with toasted shredded coconut for that extra tropical touch.
  4. Slice, serve, and enjoy your homemade Banana Coconut Cake!
