- 1.5 cups (11oz) caster sugar
- 1 cup self-raising flour
- 3.5 tbsp (1/2 stick) butter
- 3 large eggs
- 1 cup Greek yoghurt
- 1 lemon, rind grated
For the icing:
- 1/2 cup icing sugar
- 1 1/2 tbsp lemon juice
Preparation:
- Preheat the oven to 180°C / 160°C with the fan. Grease an 8-inch diameter baking tin.
- In a bowl, whisk together the egg yolks, caster sugar, and butter using a fork or an electric mixer until well combined.
- Add the Greek yoghurt and grated lemon rind to the mixture. Continue mixing until smooth.
- In a separate bowl, whisk the egg whites until they form stiff peaks.
