Let’s gather our ingredients and get ready to bake this delicious Yoghurt Cake!

Yields: 1 cake Prep Time: 20 minutes Cook Time: 1 hour Total Time: 1 hour 20 minutes

Ingredients:

  • 1.5 cups (11oz) caster sugar
  • 1 cup self-raising flour
  • 3.5 tbsp (1/2 stick) butter
  • 3 large eggs
  • 1 cup Greek yoghurt
  • 1 lemon, rind grated

For the icing:

  • 1/2 cup icing sugar
  • 1 1/2 tbsp lemon juice

Preparation:

  1. Preheat the oven to 180°C / 160°C with the fan. Grease an 8-inch diameter baking tin.
  2. In a bowl, whisk together the egg yolks, caster sugar, and butter using a fork or an electric mixer until well combined.
  3. Add the Greek yoghurt and grated lemon rind to the mixture. Continue mixing until smooth.
  4. In a separate bowl, whisk the egg whites until they form stiff peaks.
  5. Gently fold in the self-raising flour into the yolk mixture, followed by the whisked egg whites. Fold until the batter is well combined and smooth.
  6. Pour the mixture into the greased baking tin, spreading it evenly.
  7. Bake for 1 hour and 15 minutes or until the cake has risen and is thoroughly cooked. Insert a toothpick into the center of the cake, and if it comes out clean, the cake is ready.
  8. Leave the cake to cool on a wire rack.

For the icing:

  1. Sift the icing sugar into a bowl and add the lemon juice. Mix until you have a smooth icing consistency.
  2. Once the cake has cooled completely, pour the icing over the top, allowing it to drizzle down the sides.
  3. Leave the cake to set with the icing.
